This is my first post! I figured I would start off with a recipe since I'm sure I will end up talking a lot about food. I am not an expert by any means, but I love reading and learning more about good nutrition and how it affects performance. Staying strict paleo is difficult, especially when you miss being able to make a quick pb&j for lunch. Last night I discovered my favorite paleo bread recipe to date. It tastes like a dense multi-grain bread and doesn't suck up all of the saliva in your mouth like some grain-free baked goods do.

I followed this recipe exactly as it was, though I'm sure if you are trying to watch sugar, the tablespoon honey could be omitted with out affecting taste or consistency.



 

Paleo Bread

1 ½ cups almond flour
2 tablespoons coconut flour
¼ cup golden flaxseed meal
¼ teaspoon sea salt
1 ½ teaspoons baking soda
5 eggs
¼ cup coconut oil
1 tablespoon honey
1 tablespoon apple cider vinegar

Mix almond flour, coconut flour, flax, salt and baking soda in a large bowl of mixer

Beat in in eggs, oil, honey and vinegar (consistency will be thick, but not like typical bread dough)

Pour into a greased 7.5" x 3.5" loaf pan and bake at 350° for 30 minutes.

Let cool and serve! (Keep uneaten bread refrigerated to last longer!)

It actually bakes up like a real loaf of bread. I ate mine this morning with almond butter... Mmm
