Paleo Chili

Tomorrow is the last day to enter your Benchmark WOD times! Make sure you get them in if you are participating! Also, tomorrow is the last day to sign up for the in house challenge!

Today I have an awesome recipe (not a sweet for once!!)

Veggie-ful Paleo Chili


Ingredients:



  • 2 tbsp coconut oil

  • 1 yellow onion (chopped)

  • 2 garlic cloves chopped

  • 1 lb lean ground beef (grass-fed if possible!)

  • 1-2 tbsp chili powder (or to taste)

  • 1 tsp cinnamon

  • 1 tsp cumin

  • salt and pepper to taste

  • 1 1/2 tbsp unsweetened cocoa powder

  • 1 15oz can tomato sauce

  • 1 medium zucchini, chopped

  • 3 carrots, sliced (1/2 in slices?)

  • (other veggie suggestions- sweet potato, jicama, squash, peppers...)

  • 1 tbsp raw apple cider vinegar

  • 1 cup water



1- Heat oil in a large pot, then add onion and garlic. Let cook for about 2 minutes

2- Add beef and cook until it's no longer pink.

3- Add everything else! Let cook for about an hour and a half on low (make sure you stir occasionally and check the added veggies to make sure they're soft)

4- Taste, add salt, pepper, chili powder as needed. Then eat!!!

Almond Butter “Brownies”

So simple a "caveman" could make it! (Get it? haha, it's a Paleo recipe!)

Seriously, this is one of the easiest paleo baked good recipes I've found! No need to buy almond flour or coconut flour! If you're craving something "cheat-like" this is a great way to satisfy!

I made this with pureed pumpkin, but since that makes it very similar to the last pumpkin cake I posted, I'll let you know you can use smushed banana or (natural) applesauce here!
Almond Butter (Pumpkin) Brownies

Ingredients:
1 cup almond butter
¾ cup pureed pumpkin (or squash, banana, or applesauce)
1 egg
2 Tbsp Agave
1 tsp baking soda
cinnamon

Mix all ingredients together and pour into a greased 8 x 8 in pan.  Bake at 350 degrees for 25 minutes. Sprinkle top with cinnamon. Serves 8. (If you are doing the challenge, either don't add agave, or make as written, cut into 8 equal pieces and limit the number of pieces you eat in a day)

Options: This recipe is easily adaptable! I'm thinking about adding unsweetened cocoa next! Other options, raisins, coconut flakes, pumpkin pie spice...if you aren't doing this challenge, add 1/4 of honey or maple syrup, or add chocolate chips! Very versatile recipe here!!!

 

Barbells for Boobs!

This weekend was the handstand clinic! We had a great turnout and I think everyone gained something from it. A few of us were even walking by the end! It was definitely well worth it.

 

I have confirmed with Collar City CrossFit that October 20th 9am-12, they will be hosting a Barbells for Boobs. We have agreed to participate in this fundraiser with them in order to raise more money. I will get more information as it comes, but you can check out the website. This money raised will help fund screening for breast cancer for low income and uninsured individuals. There are a few options available, you can just donate, or you can donate and participate in one of the 2 WODs,"Amazing Grace" or "Helen Meets Grace".

  • Amazing Grace= 30 Clean and Jerks for time

  • Helen Meets Grace=This is a TWO-PERSON team workout with one person working at a time, except for the 400m runs, which must be performed together. HELEN consists of THREE rounds of: 400 meter run (both partners run together), 21 kettlebell swings (Rx 53/35#) and 12 pull-ups. Partners can tag-team in and out of the kettlebell swings and/or pull-ups as needed.Once all three rounds of HELEN are complete, the team immediately moves on to perform GRACE which consists of: 30 clean and jerks (Rx 135/95#) as fast as possible, partitioned anyhow between the two team members.Score is total time for the team to complete both workouts!


All workouts can be scaled as necessary!
