Very Berry Pie

I haven't posted a recipe in awhile! This one is not strict paleo for the challenge (because of the coconut sugar) but it definitely a paleo approved dessert!


Crust Ingredients:

  • 2 cups almond flour

  • ½ teaspoon celtic sea salt

  • 2 tablespoons coconut oil

  • 1 egg

  • 1 tbsp coconut sugar

Mix together until a moist dough forms, then press into a pie pan (or I used an 8in cake pan because I don’t own a pie pan!) Bake at 350 for 5-8minutes

Berry ingredients:

  • 1 sm package raspberries (about one cup? not sure of the package size!)

  • 1 sm package blackberries (dito on the size!)

  • 1/2 cup strawberries

  • 1/2 cup water

  • agave to drizzle

  • almond slices

Mix all ingredients but water into a pot and cook the fruit down. (It will get very liquidy, then it will start to thicken again.) Before it thickens too much, pour into the cooked pie crust. Bake 10 minutes at 350. Then drizzle with some agave (or don’t, up to you!) and sprinkle with sliced almonds. Let cool for about 5 minutes. This will keep the juices from going everywhere when you cut it!
