I promised a lot of people last night that I would post this cookie, they got pretty rave reviews! These are great because they don't have baking soda or powder as an ingredient. Sadly, they have honey, so if you're joining the Paleo Challenge, you won't be able to enjoy these during it!
1 cup pitted dates, chopped into chunks
2 teaspoons cinnamon
1 teaspoon nutmeg
2 teaspoons coconut oil
1/2 cup pecans
2-3 tablespoons honey
1 cup shredded coconut
2 cups almond meal
3/4 cup raisins
Preheat oven to 350F
Place dates, coconut, oil, spices and pecans in a food processor. Pulse until nuts and dates resemble large and loose crumbs.
Transfer mix to a large mixing bowl. Add remaining ingredients and mix using hands.
Form into tight hamburger-like patties and place on a greased cookie sheet
Bake for 20-25 minutes, or until lightly golden.
