“Oatmeal”-raisin gone Paleo!

I promised a lot of people last night that I would post this cookie, they got pretty rave reviews! These are great because they don't have baking soda or powder as an ingredient. Sadly, they have honey, so if you're joining the Paleo Challenge, you won't be able to enjoy these during it!

Ingredients:

1 cup pitted dates, chopped into chunks
2 teaspoons cinnamon
1 teaspoon nutmeg
2 teaspoons coconut oil
1/2 cup pecans
2-3 tablespoons honey
1 cup shredded coconut
2 cups almond meal
2 eggs
3/4 cup raisins

Directions:

Preheat oven to 350F
Place dates, coconut, oil, spices and pecans in a food processor. Pulse until nuts and dates resemble large and loose crumbs.
Transfer mix to a large mixing bowl. Add remaining ingredients and mix using hands.
Form into tight hamburger-like patties and place on a greased cookie sheet
Bake for 20-25 minutes, or until lightly golden.

Kate approves! I really hope everyone enjoyed all of the information we got last night! I've been eating Paleo for 2 months now and I'm still learning. I've lost weight and feel great (usually)! I spend a good part of my day looking up recipes and love sharing them!
