Quick Meals!

I have found with the Paleo diet, sometimes it feels overwhelming to cook all the time. Gone are the days where a bowl of cereal or a peanut butter and jelly sandwich were my go-to meals when I just didn't feel like cooking or I didn't have time. Luckily, I love eggs! You can mix just about anything with a few eggs and have a perfect, filling, and paleo-approved meal.

Raspberry, bacon, omelet (omit the goat cheese for strict paleo!)


Here are a few meal suggestions, 2-3 eggs plus any of these combos:

  • kale, blueberries or raspberries, bacon (sounds strange but tastes awesome! Especially, if you do goat cheese. I will miss goat cheese when I go strict on the 17th!)

  • deli meat (turkey/ham), tomatoes, peppers

  • chopped up sweet potato, mushrooms, onions, breakfast sausage


These are just a few I've tried lately, but you can do so much and it's easy! You can either scramble it together or if you set the stove to medium-low, let it cook frittatta/omelet style.
